Blue muffs

Mmmmm.

Working the Moses Lake Farmers Market means yummy treats like blueberries! I made muffins today using my favorite true muffin recipe, not too sweet, it’s not a blueberry cupcake, but not dull either.

Blueberry Muffins

1 cup fresh blueberries (frozen can be used too)

1 3/4 cup flour

2 tsp Baking powder

1 tsp lemon peel

1/2 tsp salt

1/2 cup applesauce (I like the cinnamon kind)

1/2 cup sugar

1 egg

1/4 cup egg substitute

2 TB canola oil

1/4 cup milk (we use soy milk)

Mix dry ingredients, mix wet, toss together, gently fold in blueberries, dump in greased muffin tin (or better yet use the muffin papers) bake for 18-22 minutes on 350°F
